Apple Cookies – Bring Fall into your Kitchen!

The weekend is coming up my friends and some of you may still be going apple picking before the season comes to an end. That will leave you with apples galore so why not make some dessert? I’m so excited to share this recipe with you! What I have got for you here is a cookie that will make your mouth buds tingle with happiness. If the tender apple and the soft chewy texture don’t win you over then the warm spices of the cookie sure will. It’s literally the love I have for Fall in cookie form. Sometimes it baffles me just how little time, effort, and ingredients is needed to make something so heavenly. They smelled remarkable coming out of the oven; to the point where I broke my “diet” to just have one of these bad boys. It’s okay to indulge every now and then. At least they have apples in them; that makes it somewhat healthy doesn’t it? 🙂
Total Time: 25 minutes
Ingredients
1 cup packed brown sugar
1 stick of room temperature butter
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon vanilla extract
1 egg
1 1/2 cups of all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 medium apple diced (small dices)
Instructions
- Preheat the oven to 375 degrees. Either grease your  cookie sheet or use a silicone mat. I highly recommend purchasing a silicone mat. I use mine ALL the time! Easier cleanup and cookies slide right off.
- Next you want to mix together the brown sugar, butter, and egg in a large bowl till no clumps are visible. You do not have to use a mixer. I use a spatula and my arm muscles and that works just fine ha 🙂 Then you can stir in the nutmeg, cinnamon, vanilla, baking soda, salt, and flour. Mix that all together. Proceed by mixing in the diced apples.
- Using either a cookie scooper or your hands to make the dough into a small meatball shape. Place on pan or mat. Make sure there is space between the cookies because they will expand when baking.
- Bake for about 10-12 minutes till lightly brown. Set aside to cool.
These cookies are super tempting. I ate one as soon as it slightly cooled because the smell was just heavenly!!! I could not help myself. You will see what I am talking about! Enjoy!
