    Eggplant “Fesenjan”

I have been trying to make more vegetarian recipes and I remembered this favorite of mine. It is a classic Persian dish but of course, I have my own twist on it hence the quotations. I have had fesenjan twice before at restaurants and always enjoyed it. This is actually my favorite way to eat eggplant. They are so tender and delicious. I promise you this dish will be a go-to recipe in your household. Did I mention it is super simple too? Servings: 2-4 Total Time: approx. 1 hour Ingredients 2 large eggplants (no stem) cut into batons or cubes (whatever you prefer) 2 yellow onions sliced thinly 2…

    Roasted Chicken & Potatoes

Ever just go in the kitchen, and see what you had then made a delicious meal out of it? This recipe was made on a whim! I had some garlic sauce that I made the day before and chicken sitting in the fridge ready to be cooked. I needed some sort of side and absolutely LOVE potatoes, especially crispy ones. So, I roasted some chicken with some amazing potatoes and we had a fantastic dinner. You can use whatever chicken you please but I recommend bone in with skin on for this recipe. Keep in mind that depending on the size of your chicken that cooking time will be different.…

    Middle Eastern Moussaka (Imsaka’a)

Many of us have heard of moussaka; that delicious greek baked eggplant and ground beef dish often topped with bechamal. Well, my mom made something very similar to it growing up. I was actually reminded of this rich dish the other day when speaking with my mom on the phone. She made it for dinner for my dad and brothers. The next day I went to the grocery store and bought the ingredients! Here is my version of it; although not as traditional since I used red peppers as opposed to tomatoes; it is still delicious! Servings: 4-6 Total Time: approx. 1 hour Ingredients 1 1/2 lb of ground beef…

    Bamya (Okra Stew)

This week was my Father in Law’s birthday and the only thing he wanted was this delicious tomato-based vegetarian okra stew to enjoy. My friends, it is so easy to make this dish that you will not believe how little effort it requires but how much big flavor and textures it has. Typically, this dish is cooked with red meat but my father in law isn’t a fan so I kept it vegetarian! I urge you to pick up some fresh okra the next time you are at the market and try this yummy stew! Servings: 4 Total Time: 1 hour Ingredients 1 lb of okra (stem cut off) 1…

    Mediterranean Stuffed Peppers

Servings: 4 pieces Total Time: approx. 1 hour Hi my lovely friends! I have a delicious vegetarian recipe for you guys today that iseasy to whip together and definitely flavorful. It is the perfect dish for #meatlessmonday. I have had these red bell peppers staring at me for the last week. I love stuffing peppers so it just came naturally to do so. Now, you don’t have to use buckwheat. You can use quinoa, rice, or even freekeh. I also recommend red bell peppers over green because its sweeter. Ingredients 2 red bell peppers cut in half and cleaned out (no stem) 1/2 cup cooked buckwheat (read cooking instructions on…

    Baked Turkey Kebabs

If you guys have been following me for a while now then you know that I never ate ground turkey growing up. I mean NEVER! It was always ground beef in our household until my in-laws introduced me to ground turkey. I then started to experiment with it and have grown to really love it. It’s so much leaner than beef too so its a great substitute. I am super excited to share this recipe with you because you can literally cook it in under 30 minutes and it makes for a healthy wholesome main dish to dinner. Servings: 9 skewers Total Time: approx. 40 min Ingredients 1 1/2 pounds…

    Cauliflower gnocchi bake

Lately, I have been seeing this cauliflower gnocchi from Trader Joe’s circulate on my feed. I became super curious to try it since I like gnocchi and this was a dairy free, gluten free, and healthier form of it. I recently purchased some and decided to make like a baked pasta using it! Oh boy, it was so good. The gnocchi itself doesn’t have a strong cauliflower flavor but a nice texture. The whole dish together will trick you into thinking you are eating something unhealthy because of how decadent it is. I highly recommend making this for dinner!! To make this vegan, just dont include the chicken. Servings: 4…

    Homemade Poke Bowls

The first time I had this, my hubby and I were visiting California and we were guided to a local poke shop to try. I was excited to try it to be honest because I love sushi! For those who don’t know, poke bowls are the Hawaiian version of deconstructed sushi. They are super simple to make at home too. I personally don’t like tuna so I opted for cooked shrimp but my husband loves tuna! Do what you want just make sure the quality of the raw fish is the best you can get. (Sushi quality) Servings: 3 Total time: approx. 20 min Poke Bowl Ingredients 12 oz. Wild…
