    Eggplant “Fesenjan”

I have been trying to make more vegetarian recipes and I remembered this favorite of mine. It is a classic Persian dish but of course, I have my own twist on it hence the quotations. I have had fesenjan twice before at restaurants and always enjoyed it. This is actually my favorite way to eat eggplant. They are so tender and delicious. I promise you this dish will be a go-to recipe in your household. Did I mention it is super simple too? Servings: 2-4 Total Time: approx. 1 hour Ingredients 2 large eggplants (no stem) cut into batons or cubes (whatever you prefer) 2 yellow onions sliced thinly 2…

    No bake Knafeh Cheesecake

I have been thinking about recipe developing this cheesecake for a long time! I have had so much love with my Nescafe cake which requires no baking whatsoever that I decided to make another Middle Eastern dessert with a modern twist that requires no baking. Knafeh is a very popular dessert with many variations across the Middle East but the most popular would be the one with cheese which Nablus, Palestine is known for. I actually have that variation on my blog posts already. This is my take on an American cheesecake but using the shredded phyllo dough for the crust and topping. I hope you enjoy it! Servings: 8-12…

    Makrouta

I would love to introduce you guys to Makuta, a delicious date filled cookie known for its aromatic anise flavor and delicious sesame topping. This cookie is very similar to Ma’amoul which is a very popular Middle Eastern date filled cookie often served around Eid for Muslims. While Ma’amoul is more delicate and intricate to make, Makrouta is sturdier, less sweet, and easier to produce. It makes for a mouthwatering treat with a warm cup of tea or coffee. I will be sharing with you a recipe that my mom once shared with me for these beautiful and flavorful Makrouta cookies using some of the best products from Ziyad Brand.…

    Pistachio Nice Cream

You may be thinking what in the world is Nice Cream? Well, its basically ice cream made out of strictly ripe frozen bananas blended to silky perfection. Of course, the Middle Eastern in me chose pistachios as the flavor profile for this particular nice cream. Pistachios are used predominantly overseas. Booza Arabia (Arabic Icecream) is actually made out of smooth yet sticky vanilla based ice cream with loads of crushed pistachios. This is reminiscent of that but much healthier and easier to make. Ingredients 6 frozen ripe bananas peeled and sliced 1-2 tbsp rose water 1 tsp vanilla 1 tbsp honey or maple syrup 1/3 cup pistachio butter 2 tbsp…

    Bamya (Okra Stew)

This week was my Father in Law’s birthday and the only thing he wanted was this delicious tomato-based vegetarian okra stew to enjoy. My friends, it is so easy to make this dish that you will not believe how little effort it requires but how much big flavor and textures it has. Typically, this dish is cooked with red meat but my father in law isn’t a fan so I kept it vegetarian! I urge you to pick up some fresh okra the next time you are at the market and try this yummy stew! Servings: 4 Total Time: 1 hour Ingredients 1 lb of okra (stem cut off) 1…

    Baked Turkey Kebabs

If you guys have been following me for a while now then you know that I never ate ground turkey growing up. I mean NEVER! It was always ground beef in our household until my in-laws introduced me to ground turkey. I then started to experiment with it and have grown to really love it. It’s so much leaner than beef too so its a great substitute. I am super excited to share this recipe with you because you can literally cook it in under 30 minutes and it makes for a healthy wholesome main dish to dinner. Servings: 9 skewers Total Time: approx. 40 min Ingredients 1 1/2 pounds…

    Mint Lemonade (Refreshingly Tasty)

Hi everyone!! I’ve been wanting to make mint lemonade for a month now but my mint plant did not grow till recently. Yay! My dad also handed me some fresh mint with its roots before leaving New Jersey which I did bring with me and placed it in a glass to use out of my kitchen. Now that I had all this mint, I knew it was time to make this delicious drink that is so popular! I opted to use honey or agave as my sweetener instead of sugar because its simply  better for you and I wanted to make a lighter simpler version than the average mint lemonade.…

    Zucchini Egg Fritters (3ijeh)

Hi my friends! How was your weekend? I’ve been meaning to share this delicious simple egg recipe because I am sure just like me you guys must be sick of eating chicken or red meat every day for iftar. Every now and then, my family would make an iftar meal known as nawashef where basically we would eat baba ghanouj, hummus, pita bread with other dips along with eggs and other veggie dishes with soup and salad. Those were always one of my favorite meals! It was like a cleanse from eating so much meat. One aspect of those dinners always included 3ijeh which is this zucchini and veggie egg…
