Lately, I have been super busy and quick dinner meals have been getting me through the evening. Saute’s and stir fry’s are my new favorite thing! This chicken & okra saute is delicious! It is also hubby approved. He never liked okra because of its slimy texture but when its cooked like this, you don’t taste that texture as much. I hope you enjoy this quick weeknight meal!
2 minced garlic cloves
2 1/2 cup chopped okra (thin slices)
1 lb of diced chicken breast or chicken tenders (skinless & boneless)
2 tbsp of liquid smoke
2 tbsp Worcestershire sauce
1 tbsp paprika
1 tbsp garlic powder
Salt & Pepper
2-3 tbsp olive oil
Toasted nuts (garnish)
In a skillet, add 1 1/2 tbsp of olive oil. Add the garlic to the pan and saute for a minute till fragrant. Then add in the okra.
Add two splashes of the liquid smoke and the Worcestershire sauce. Season with salt, pepper, and a tad of garlic powder.
Cook together for about 6 minutes till okra is getting a nice color and tenderizes just enough.
Once cooked and has a nice sear. Take out of the pan and set aside. Now add the rest of the olive oil, then the diced chicken on medium heat.
Season with salt, pepper, garlic powder and paprika. Splash with more of the liquid smoke and Worcestershire sauce.
Let it cook on each side for about 3 minutes. Allow a sear on each side but do not overcook the chicken. Should not take more than 6-8 minutes to cook.
Add the okra to the pan with the chicken and saute together for another minute or so.
Plate as is or with some rice and top with some toasted nuts for crunch! Enjoy 🙂
