Chicken Stuffed Zucchini Boats

I am here to make eating healthy easier for you guys. For all of you who want a delicious wholesome meal in 30 minutes then this dish is for you. I am using ground chicken from Boxed Halal which tasted great and is a service perfect to those who don’t have access to halal meats close to them. The zucchini is the perfect vegetable for stuffing because not only does it get tender and delicious but also keeps its shape making it very easy to eat and enjoy. They are also inexpensive which is a win-win!

Servings: 6 zucchini boats

Total Time: approx. 30 min

Ingredients

3 zucchinis

1 lb of Boxed Halal Ground Chicken

Salt & Pepper to taste

1 tbsp garlic powder

1 tbsp seven spice

1 tbsp onion powder

1 tbsp paprika

2-3 tbsp olive oil

1 cup of shredded cheese of choice

Salsa Ingredients

1/2 a bell pepper broiled for 5-10 min seasoned with olive oil, salt, and pepper

1/4 a red onion

Handful of parsley

Handful of fresh mint

1 garlic clove

1 cup plain yogurt

1/2 a lemon’s juice

1/2 tsp cumin

Salt & pepper to taste

Blend all together. Set aside.

Instructions

Preheat oven to 375 F.

Cut zucchini in half then scoop the center of the zucchini. The best technique in doing so is outlining the center of the zucchini with a knife and using a spoon to scoop out the innards.

Then season the zucchini with a tbsp or 2 of olive oil, salt, and pepper.

Place on a nonstick baking sheet then put in the oven to cook for about 25 min until fork tender.

Meanwhile, cook the chicken in a skillet with 2 tbsp olive oil and the above seasonings. There should be no pink. This will take about 10-15 min to cook.

Once chicken is cooked, take out the zucchini boat and top with the chicken in the crevice. Then top with cheese and place back into the oven until cheese is melted.

Take out and top with the salsa. Enjoy!
