Creamy Lemon baked Cod
Ingredients
- 3 Cod Fillets I used Sitka Salmon (best quality fish)
- Salt & Pepper to taste
- 1 tbsp Garlic Powder
- 1 pint Sliced white Mushrooms
- 1 tbsp Paprika
- 2 tbsp Grated Parmesan Cheese
- 1 Onion sliced
- 1 tbsp Olive oil
- 6 Garlic cloves halved
Lemon Cream Sauce
- 1/3 Heavy cream
- Salt & Pepper to taste
- 1 Lemon's Juice with zest
- 3 tbsp Butter melted
Instructions
- Add all the cream sauce ingredients to a bowl and mix together.
- Season the fish with salt, pepper, paprika, parmesan, and garlic powder.
- Add the fish to desired baking pan.
- Season the mushrooms, garlic, and onions with salt and pepper and the olive oil.
- Add the veggies to the baking pan surrounding the fish.
- Top with the cream sauce.
- Bake in a 400 F oven for 15-20 min or until fish is cooked through. It should look flaky white. Serve with mashed potatoes, cauliflower puree or rice. Enjoy!
