Creamy Lemon baked Cod

Ingredients

  • 3 Cod Fillets I used Sitka Salmon (best quality fish)
  • Salt & Pepper to taste
  • 1 tbsp Garlic Powder
  • 1 pint Sliced white Mushrooms
  • 1 tbsp Paprika
  • 2 tbsp Grated Parmesan Cheese
  • 1 Onion sliced
  • 1 tbsp Olive oil
  • 6 Garlic cloves halved

Lemon Cream Sauce

  • 1/3 Heavy cream
  • Salt & Pepper to taste
  • 1 Lemon's Juice with zest
  • 3 tbsp Butter melted

Instructions

  • Add all the cream sauce ingredients to a bowl and mix together.
  • Season the fish with salt, pepper, paprika, parmesan, and garlic powder.
  • Add the fish to desired baking pan.
  • Season the mushrooms, garlic, and onions with salt and pepper and the olive oil.
  • Add the veggies to the baking pan surrounding the fish.
  • Top with the cream sauce.
  • Bake in a 400 F oven for 15-20 min or until fish is cooked through. It should look flaky white. Serve with mashed potatoes, cauliflower puree or rice. Enjoy!
