This is the most requested cookie! I made these last week for my event and they were gone in seconds with people asking me for the recipe left and right! I couldn’t believe it, especially since it was a gluten free cookie and I am not that confident in gluten free baking.
To think it is actually so simple to make too. I can’t wait for you guys to try making it at home and enjoy the beautiful almond flavors.
Servings: 30-35 cookies
Total Time: approx. 20 min
2 1/4 cup of Bob’s Red Mill 1:1 Baking flour
3/4 cup of light brown sugar
3/4 cup white sugar
1 tsp vanilla flavor
1 1/4 tsp almond flavor (extract)
2 cups of chopped almonds (preferably toasted)
Pinch of Salt
1 tsp Baking soda
2 sticks of butter, room temp.
Preheat oven to 360 F.
In a KitchenAid, using the paddle attachment, beat together the sugar, butter, vanilla, and almond. *Use a rubber spatula and/or whisk if you do not have a kitchenaid.
Add the egg one at a time to beat into the mixture.
Add in the flour, baking soda, and salt. Continue to mix. Then add in the chopped almonds.
Using a cookie scooper, scoop the dough into balls on a parchment lined baking pan.
Leave at least an inch in between the cookies for expansion.
Bake for 12 minutes till the bottom is lightly browned. Allow to cool completely before enjoying!
