
Greek Style Quinoa Salad
A few years ago, I visited a local Greek restaurant and ordered a delicious orzo salad. I decided to make a dish that showcases the same flavors but using quinoa instead since its healthier than orzo which is a pasta by the way. This recipe is super simple and proves that just several fresh ingredients make such a difference in a meal. This is the perfect meal prep for lunch or side dish to a dinner. The salad pairs beautifully with plump grilled shrimp or chicken. I hope you enjoy this yummy salad with Mediterranean flair.
Ingredients
1/4 cup chopped red onion
1/2 cup finely chopped parsley
1/4 cup finely chopped cilantro
2 small tomatoes diced
1/4 cup chopped black olives
2-3 tbsp crumbled feta cheese
3/4 cup quinoa cooked (cook like instructions on package)
1/2 cup diced cucumber
Salt & pepper to taste
Juice of one lemon
2 tbsp olive oil
Instructions
- Mix everything together very well in a bowl then cover and place in the fridge for an hour so the flavors marinate together well. Enjoy as is or top with grilled chicken or shrimp!
