Healthy Almond Butter Cookies

Hi my friends! Last night, it dawned on me that I had so much almond and peanut butter in my pantry that I wanted to use to make a healthy snack for my husband since he is obsessed with nut butter! This is a super easy cookie to make yet healthy and delicious. It is more on the softer side and can be crumbly so be sure to cool it down completely before touching. This is super yummy with some almond milk in the morning and could be made with peanut butter too! Just use vanilla flavoring instead of almond. You can even use vanilla flavoring for this cookie if you don’t have almond.


1 cup creamy almond butter

1 tsp almond flavoring

2-3 tbsp honey or maple syrup

1 tbsp chia seeds

1 tbsp ground flax seeds

1/2 cup oat flour (just process regular oats until they are fine) (I use GF oats)

1 beaten egg (flax egg if vegan)


Preheat oven to 350 F.

In a bowl, mix these ingredients all together until its a batter.

Use a cookie scooper to scoop uniform sized cookies onto a parchment lined baking sheet.

Using the back of a glass, press down gently on the cookie until it flattens just slightly.

Bake in the oven for 10 minutes. Take out and allow to completely cool before touching.
