This Mediterranean Chickpea Salad is a meal-prep repeat in our household for good reason! It is so delicious, super easy to put together, nutrient-dense, refreshing, and a wonderful side dish all around. I started making this salad to increase my protein and fiber intake, and as a Palestinian, I almost always have a can of chickpeas in my pantry to make hummus or falafel.

Mediterranean Chickpea Salad Ingredients

What’s wonderful about this recipe is that a majority of the ingredients, if not all, are probably already in your pantry and fridge. Just like most Mediterranean and Middle Eastern dishes, simple ingredients yield huge flavor.

  1. Chickpeas: A can of chickpeas (about 2 cups or 14 oz) is the perfect size for this recipe unless you plan to prep a larger amount! I used canned chickpeas and drained the liquid, then gave them a quick rinse; you can also use dried chickpeas and soak them overnight.
  2. Fresh Vegetables: My favorite combination of vegetables and herbs for this salad would be diced cucumbers, cherry tomatoes, pitted olives, diced red onion, and chopped parsley.
  3. Feta Cheese: Feta crumbles add a salty, slightly creamy touch to the salad, but it is optional if you want to keep it vegan.
  4. Dressing: The dressing is a lemon-mustard vinaigrette that adds a touch of Arab flair with a dash of sumac, Aleppo pepper, and dried mint.

How to make this Mediterranean chickpea salad

This salad is truly effortless and just requires one bowl to toss everything. It is really a matter of whisking together the vinaigrette and combining all the ingredients for a delicious, hearty salad.

First, make the lemon mustard vinaigrette: combine fresh lemon juice, olive oil, minced garlic, mustard (I use spicy brown), Aleppo pepper for some heat, a bit of sumac for tang, and dried mint for extra freshness.

Then, in a bowl, add the drained chickpeas, tomatoes, cucumbers, feta cheese, herbs, and onion. Top it off with the dressing and mix. Taste and adjust the salt or acid as needed.

What to serve with this chickpea salad:

  • This salad is wonderful on its own for a protein-packed meal, but it also pairs nicely with other proteins. For example, it would be lovely as a side with beef kofta kebab, grilled chicken, or salmon.
  • I can also imagine it being fantastic with a can of tuna tossed in there for healthy fats and omega’s with additional protein. For breakfast, you can probably toss in some boiled chopped eggs for an egg chickpea salad!

storage Tips

Unlike most salads, this one stores well and doesn’t get soggy, which makes it perfect for meal prep. The chickpeas hold well, and dont become too mushy. It is best enjoyed within 5 days of making and stored in an air-tight container in the fridge.

Ingredients

  • 14 oz Chickpea Can, drained
  • 1 cup Cucumbers, diced
  • 1/2 cup Cherry Tomatoes, sliced
  • 1/2 cup Olives, pitted, sliced
  • 1/2 cup Parsley, finely chopped
  • 1/2 cup Red onion, finely chopped
  • 1/4 cup Feta, crumbled optional

Dressing

  • 2 tbsp Olive oil
  • 3 tbsp Fresh lemon jucie
  • 1/2 tbsp Mustard
  • 1 Garlic clove, minced
  • 1/4 tsp Dried mint, ground
  • 1/4 tsp Sumac
  • 1/4 tsp Aleppo pepper

Instructions

  • Stir together all the dressing ingredients and set aside.
  • In a bowl, add all the ingredients for the salad. Top off with the dressing and toss together. Enjoy!
