I was coring some potatoes today and of course, you guys know that I like to utilize everything. I was left with the insides of a potato which I turned into these potato pancakes for brunch! It was so easy to make and it always amazes me how you can turn one dish into something completely different or even get 2 dishes out of one main ingredient. I am a huge potato fan and would recommend these with some creamy cheese and eggs! It would be a perfect brunch.
Servings: 3 pancakes
Total Time: approx. 15 min
2 peeled potatoes cubed
1 egg white
1 small onion chopped
1 garlic clove
1 1/2 tbsp GF flour or all purpose flour
Salt & pepper to taste
2 tbsp vegetable oil
In a processor, add the onion, potatoes, garlic, salt and pepper. Blend until there are no lumps.
Strain this mixture of its liquid. Discard liquid but save the white starch at the bottom of the bowl.
Add the potato mixture into a bowl with the starch, flour, egg, salt, and pepper. Mix well.
Heat up the oil in a pan and spoon the potato mixture about 2 tbsp of it. Flatten lightly then fry for 3 minutes each side until golden brown. Place on some paper towel. Repeat until done with batter.
Serve with cream cheese and eggs!
