Refreshing Coleslaw

Hello my friends!

I literally came up with this recipe on the whim last night when I was scavenging my fridge to make a quick side dish to go with our steak and e cauliflower puree. It dawned on me that I had all the ingredients necessary for a great coleslaw which would perfect. Here it is! A no mayonnaise coleslaw but yet so refreshing and tasty!

Servings: 4

Total Time: 10 minutes

Ingredients

2 cups shredded red cabbage

1 cup of carrots cut into match sticks

2 green onions sliced

1/2 cup cilantro chopped

2 radishes sliced thin

1/2 cup chopped nuts (I used mixed nuts)

Dressing

1 tbsp olive oil

1 tbsp apple cider vinegar

1 tbsp maple syrup or honey

1 tbsp fresh lemon juice

Salt & pepper to taste

Instructions

Mix all the ingredients for the dressing together.

In a bowl, add all the veggies and nuts. Toss with the dressing an voila! Serve cold.
