  • Cauliflower- this is obviously essential in making the salad! Grab one at your nearest market and cut into florets for this recipe.
  • Couscous– there are so many varieties of couscous, but for this recipe, you will need pearl couscous, which is pasta-like.
  • Chickpeas-I use canned chickpeas for convenice also known as garbanzo beans. Just drain the can.
  • Spices: warm, earthy spices are used here, such as turmeric, cumin, garlic powder, and chili powder.
  • Herbs: I like to use an array of herbs for this salad, like mint, parsley, and cilantro, all chopped well.
  • Dates: These bring the perfect amount of sweetness. I prefer Mejdool dates from Natural Delights. I dice them into smaller pieces so it is just enough and scattered throughout.
  • Pistachios: These add the right amount of nuttiness, and the color is just stunning in the salad.
  • Tahini dressing: a mixture of creamy tahini paste, honey, fresh lemon juice, Aleppo pepper for a touch of heat, and salt. Water can be used to thin the dressing if needed.

How to Make This Roasted Cauliflower and Couscous Salad

This pearl couscous salad recipe is as easy as it is delicious. You’ll be shocked at how little effort it takes to have it ready to serve. The way to make this salad is simple, requiring only a few kitchen tools and pantry staples.

Step 1: Roast the Cauliflower

The first and most important step here is to roast the cauliflower and chickpeas. I like to toss them with good Palestinian olive oil and top with the spice mix. Make sure to rub the spice mixture in so they’re thoroughly coated, then roast at 400°F until golden and caramelized.

Step 2: Prepare the Pearl Couscous

While your cauliflower and chickpeas are roasting, cook your pearl couscous according to the package directions, and allow it to cool slightly. Mixing it while it’s too hot may result in a mushy roasted cauliflower couscous salad.

Step 3: Get The Dates & Pistachios Chopped and ready

Rinse and pit your Medjool dates (I love Natural Delights Medjool dates), then dice them into smaller pieces. In a saucepan, heat the ghee and then add the diced dates and pistachios and cook until caramelized and toasted. Be patient- this can take a few minutes.

Step 4: Make The Tahini Dressing

This dressing takes this roasted cauliflower and couscous salad to out-of-this-world amazing. Whisk together the tahini, lemon juice, honey, and spices until smooth. Let it sit for at least 10 minutes for the flavors to really meld together.

Step 5: Assemble The Salad

Now to make the magic happen- combine the roasted cauliflower, couscous, chickpeas, herbs, pistachios, and chopped dates. Toss with the dressing, garnish with fresh mint leaves and pomegranate arils if you have them, and serve.

On its own, this is a wholesome, nutrient-rich vegetarian meal. You have your protein from the chickpeas and carb source from the pearl couscous. The fresh herbs and cauliflower are your veggies, and it all comes together with a clean, creamy dressing. But if you wanted to pair it with another source of protein, there are a few great options!

How To Make-ahead & Store This Roasted Cauliflower and Couscous Salad

You can most definitely make all the components of this salad ahead of time, making it wonderful for a potluck or gathering. I would toss the dressing components the same day and let them sit at room temperature for the best results.

I find this salad best enjoyed at room temperature or warmed up. It is still good straight out of the fridge, but not as good as warming all the flavors together and loosening the tahini dressing, which may have thickened in the fridge with the couscous. You will get a better experience this way. But overnight, feel free to store it in an airtight container in the fridge, then heat it till just warm when you plan to enjoy it!

This roasted cauliflower and couscous salad keeps well in the refrigerator for up to 3 days in an airtight container. Because the flavors continue to develop, it may even taste better the second day. However, I wouldn’t recommend letting this salad sit in the fridge too long. Otherwise, the chickpeas lose their crispiness, and the cauliflower may become a little soggy.

While you can technically use any type of couscous you have on hand, this salad works best with pearl couscous. The reason pearl couscous is the best option for this cauliflower and couscous salad is that its larger size holds the dressing well and creates a heartier, more filling salad.

Ingredients

Roasted Cauliflower and Chickpeas

  • 1 Cauliflower, medium, cut into smaller florets
  • 1 can Chickpeas, drained about 14 oz.
  • 2 tbsp Olive oil
  • 1/2 tsp Chili Powder
  • 1/2 tsp Turmeric
  • 1/2 tsp Ground Cumin
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1/4 tsp Black pepper

Date & Nut Ingredients

  • 4 Natural Delights Medjool Dates,pitted, diced
  • 1/4 cup Pistachios
  • 1 tbsp Ghee

Couscous Preperation

  • 1 cup Pearl Couscous
  • 1.5 cups Vegetable Stock
  • Pinch of Salt

Herb Mix ingredients

  • 1/4 cup Mint, finely chopped
  • 1/4 cup Parsley, finely chopped
  • 1/4 cup Cilantro, finely chopped

Creamy Tahini Dressing

  • 1/4 cup Tahini Paste
  • 1/2 a Lemon's juice
  • 1 tbsp Olive oil
  • 1 tbsp Honey
  • 1/8 tsp Aleppo Pepper
  • 1/2 tsp Salt
  • Water to thin out dressing if needed

Instructions

  • Add the chickpeas and caulouflower florets to a large sheet pan. Add the olive oil and seasoning mixture on top of them. Season well and evenly rubbing the olive oil and spices throughout.
  • Next, place in a preheated 400 F oven and bake for about 25 minutes until lightly caramlized and the cauliflower is cooked through. Flipping once halfway.
  • In the meantime, make the pearl couscous. Add the couscous to a pot with the vegerable stock and a pinch of salt. Bring to a boil then simmer until cooked through. Set aside.
  • In a saute pan, add the ghee with the diced dates and pistachios. Saute until lightly caramelized and toasted. This just takes a few minutes. Then set to the side.
  • To make the dressing, combine the tahini paste with the lemon juice, honey, salt, and water to thin it until you get a creamy pourabe consistency.
  • To assemble, toss the roasted cauliflower and chickpeas with the couscous. Add the chopped minxed herbs as well and the dressing. Toss well then top with the toasted nuts and dates. Enjoy warm or room temperature!
