Strawberry Banana Smoothie bowl with Vanilla Almond Granola

I am a huge granola lover! There are endless options for this delicious crunchy treat that there is always something for anyone. You can check out my easy healthy granola recipe here too. This granola reminds me of one of my favorite cereals Honey Bunches of oats. This variation of Vanilla Almond Granola is gluten-free, dairy-free, and vegan too! It was so good on top of my homemade strawberry banana smoothie bowl. It literally tastes like those bowls from Jamba juice, which I happen to love.

This granola is addicting and the perfect match for this 3-ingredient smoothie bowl. My husband could not stop munching on it! And to be honest, neither could I. I found myself adding almond milk to this and enjoying it as cereal for breakfast or if I was craving a sweet treat. It is So easy to make too and a much healthier alternative to what stores have to offer.

It is also a great make-ahead treat for Ramadan time to snack on during suhoor. The oats have fiber, and the nuts have healthy fats while the natural sweetener will provide that extra boost of energy to get you through the day.

What I love most about this granola recipe is how simple it is yet packed with dimensions of flavor. You truly taste the vanilla, almond, and cinnamon notes with just a handful of ingredients. Personally, the sweetness is just perfect. I never enjoyed overly sweet treats but this is just right. Feel free to adjust the syrup level to your liking. This stuff is seriously delicious. Ingredients

  • 2 cups Rolled oats Gluten Free or regular
  • 1/4 cup Coconut oil Melted
  • 1 tbsp Vanilla Flavor I use Trader Joe's brand (alcohol free)
  • 1/3 cup Maple Syrup
  • 1/2 tsp Ground Cinnamon
  • 3/4 cup Slivered Almonds or almond halves
  • A pinch Salt

Strawberry Banana Smoothie Bowl

  • 1 ripe Frozen Banana cut into slices*
  • 1 1/2 cups Frozen strawberries cut in halves*
  • 1/2 cup Almond milk any milk will work

Instructions

  • Mix together the rolled oats, cinnamon, and almonds in a bowl.
  • In another bowl, mix together the melted coconut oil, vanilla, and maple syrup.
  • Add the wet ingredients to the dry ingredients and mix together.
  • Line a baking pan with parchment paper.
  • Spread the mixture onto the baking pan into one flat layer.
  • Sprinkle with a pinch of salt. Bake in a 325 F oven for about 30 minutes stirring the mixture every 10 minutes.
  • Once out of the oven, make sure the granola completely cools for maximized crunch.
  • Store the granola room temperature in an airtight container for up to a week.

  • Blend together all the smoothie ingredients to a thick creamy consistency then top off with desired toppings such as the vanilla almond granola!
