Hey friends! The other night, I was laying in bed and my creative juices were flowing. I knew I wanted to make something with ground beef for the following day but not sure what! Yes, I often plan my meals the night before! So, I wanted to do something different when the idea of a kufta¬†tart popped into my mind. Often, I utilize things I already have in my pantry or fridge and that is what I did in this case. I thought it was an awesome idea especially since it is keto friendly which is perfect for hubby, it is dairy and gluten free which is perfect for me…

Fattet Makdous (layered baby eggplant dish)

If you ask me what my favorite Ramadan side dish is; it would be this exact dish right here. I am obsessed with fattet makdous which basically is a layered baby eggplant dish with ground beef, bread, and sauces. It literally has all my favorite things in a dish. I have been craving this more than ever lately and with Ramadan right around the corner; I knew I had to come up with a recipe for you all that was just as good but a tad healthier and better for those with gluten and dairy intolerance. Yes, there are several steps to this meal but they are all crucial and…

    Citrus Herb Chicken

Hey guys! I don’t think Chicago got the memo that is is Spring time. Spring, the season of flowers and sunshine. Yesterday was extremely gloomy outside and it was actually snowing. So, I decided to bring my own sunshine to our home by making some citrus inspired dinner. I brought back kumquats from our California trip. Kumquats are like mini oranges that you can enjoy in one bite! So, I decided to use those along with some lemon as a marinade for chicken and guess what? The chicken came out so flavorful and moist. Super excited to share the recipe with you all! Ingredients 2 large chicken breast cut into…

    Herb Crusted Salmon

Hi Everyone!! How you all doing? Lately, I have been inspired by the food I ate in California. Lots of fresh ingredients used to make scrumptious food. I also want to make eating dinner with my husband more of an experience rather than lets eat and get on with the day. So, for dinner the other day I made a meal centered around salmon. We absolutely love salmon and its important to incorporate any fish into your diet; they are high in omega fatty acids which is good for the heart. Usually, I like to marinate my salmon with Asian flavors but this time I did something different. I created…

    Steak Stir Fry

Lately, Stir fry meals have been my go to quick dinner. Things have been hectic and dinner still has to make the table. I’m sure many can relate to this. Well, like you guys know; I love to implement vegetables in all my meals so a quick easy dinner is no exemption. In my stir fry, I implement 6 different types of veggies that work remarkably well together. I’ve made this twice this week and it has been a favorite! The first time, I topped it with shrimp and this time with skirt steak. It just shows you how versatile stir fry can really be. It works really well with…

    Pretzel Coated Popcorn Chicken

When I was in high school, I would often purchase popcorn chicken at lunch time. There was something addicting about that crispy outside and juicy inside that won me over. I haven’t had popcorn chicken since then! Mainly because I thought the only way to enjoy it would have to be fried but no, I was wrong. I baked these till crisp and tender on the inside. I also made these gluten free by using Snyder’s gluten free pretzels as the crust. I also bought my favorite flavor which is honey mustard and onion. C’mon who doesn’t love that? Instead of all purpose flour; I used tapioca flour to substitute.…

    Eggplant Casserole

Growing up my mom always made a baked dish that incorporated ground beef, tomatoes, and eggplant. It was called imsaka3a and I was reminiscing of that meal when I came up with this healthier twist. Basically, omitted the tomatoes which are very acidic and that is something I am trying to not incorporate into my diet as much. Also, tomatoes aren’t keto friendly because of their carb content which isn’t much but keto is that strict. I had to make it keto friendly for my husband who is currently following that diet. Instead of tomatoes, I used carrots! Carrots and ground beef actually go really well together. I’ve been experimenting…
