For the salsa, place all the ingredients in a food processor and pulse until it looks just like a salsa! Set it aside.
Add 1 cup of the salsa mixture to the chicken. Toss and make sure all the chicken is well coated. Season with some salt and pepper as well. Add more salsa if needed. Marinate this for at least 1-2 hours.
While the chicken marinates, prep the yogurt sauce and onion topping.
For the yogurt sauce, combine all its ingredients. Mix well and set aside to chill in the fridge.
For the onions, toss all its components together and also set aside.
Once the chicken is done marinating, you can either grill it which gives the most flavor or bake it or even cook on the stove-top. Whatever is easiest for you. Chicken is fully cooked when it reaches 165F internal temeraure.
For the bread, preheat the oven to 400 F. Add the bread to a lightly oiled baking pan. Lay them out flat. Add 2-3 tbsp of the salsa to the top of the flatbread and spread evenly.
Bake for 10 minutes until slightly crisp.
In the meantime, toast the nuts with the oil until lightly browned then place on a plate lined with paper towel to abosrb excess oil.
