This easy bruschetta makes for a fantastic Italian appetizer that can be served all year round. It is especially delicious with creamy burrata.
Servings: 4 people
- 1 Baguette cut into slices
- 8 Roma Tomatoes diced
- 4 Garlic cloves
- 1/4 cup Fresh Basil or Arugula chopped
- Salt & Pepper to taste
- 3 tbsp Olive oil
- 6 oz Burrata
- 1 tbsp Balsamic Glaze
- Grated Parmesan Cheese optional, garnish
In a bowl. combine the diced tomatoes with the arugula or basil. Mash 3 of the garlic cloves and add to the micture as well. Season this with salt, pepper, olive oil, and balsamic glaze. Mix together very well.
Add the sliced baguette to a baking sheet lined with parchment paper. Spray the bread on both sides with some olive oil. Broil for 1-2 minutes on each side until crisp and lightly browned.
Rub the last garlic clove on each slice of bread which will add more flavor. Top each slice with a spoonful of the tomato mixture.
Add the bruschetta to the desired serving dish. In the center, add the burrata. Use a fork to split the burrata into chunks of creamy goodness! Drizzle it with a little olive oil and a dash of black pepper. Enjoy!
