This is a delicious 30 minute vegetable lo mein meal that is loaded with vegetables and packed with flavor and nutrients that the whole family can enjoy.

Ingredients
Fresh Lo Mein Noodlesoften found in the fridge section in Asian aisle, cooked to package instructions
2tbspVegetable oil or Sesame oil
1Bell Pepper, coloredthinly sliced
2cupsFresh Spinach
10Baby Carrotsthinly sliced
3Green Onionschopped
1pintSliced Mushrooms
4Garlic clovesminced
1tbspFresh Gingercrushed
Salt & Pepper to taste
Sauce
1tspSesame Oil
1/4cupSoy sauce or coconut aminos
1/2tspChili Sauce
1/2tspSugar
Toppings
Peanutscrushed
Squeeze of Fresh Lime wedges
Instructions
In a pan, add 2 tbsp of vegetable or sesame oil. Saute garlic, onion, and ginger in the pan until fragrant.
To the pan, add the bell peppers, carrots, and mushrooms. Saute until fork tender. Then, add the spinach and saute until wilted. Season all of this with salt and pepper.
To this, add the lo mein that has been drained (make sure the noodles arent stuck together). Mix together the sauce ingredients and add to the lo mein. Give it a nice stir to make sure everything is well coated in flavors.
Top off with crushed peanuts and a squeeze of fresh lime juice. Enjoy warm or room temperature!

This recipe is perfect with cooked chicken, beef, or shrimp. They are all fantastic add ons to make it even more hearty!
