Total Time:20 minutes

Ingredients

  • 1 lb Ground Beef
  • 2 cups Chopped Tomatoes
  • Salt & Pepper to taste
  • 1 cup Frozen or fresh Peas and Carots whatever you have on hand
  • 1 cup Cubed Boiled potatoes
  • 1/3 cup Fresh chopped cilantro
  • 3 Garlic cloves chopped
  • 1 Yellow onion chopped
  • 1 tsp Cumin
  • 1 tbsp Seven Spice
  • 1 tsp Ground Coriander
  • 2 tbsp Tomato Paste
  • 1/3 cup Vegetable stock more to make the mixture looser
  • 1 cup Cooked White Rice

Instructions

  • In a large nonstick skillet, add the ground beef and cook on medium heat. Break down the meat to make it ground bits with your wooden untensil. Note that there is no need to add oil to cook ground beef since it already has some fat content in it. Season the meat with salt and pepper.
  • After the meat is browned, add the onions and garlic to the meat mixture. Stir it all together and make sure the meat is broken down. Let this cook for a few minutes and then add the tomatoes to the muxture along with the tomato paste. Season with salt, pepper, cumin, coriander, and seven spice. Mix well.
  • Keep stirring as it cooks on medium heat. It will appear chunky at first but once the tomatoes cook and break down then it will be saucier. Cover and let it cook for a few minutes.
  • After a few minutes, add the peas/carrots, potatoes, and cilantro. Season with salt and pepper. Stir together.
  • Add the vegetable stock to thin out the mixture and stir. Cover and allow ofr it to simmer for 2 minutes then enjoy.
  • Plate the cooked rice with the tomato beef sautee. Enjoy it warm!

Notes

You can use a crushed tomato can in place of fresh tomatoes but in this case, you will not need any stock as the tomato sauce will have enough liquid.
