Serves 6 Tacos
Total Time:30 minutes

Ingredients

Ground Beef Filling

  • 1 lb ground beef
  • ¼ red onion
  • Handful of parsley
  • 2 garlic cloves
  • Salt and pepper to taste
  • 1 tbsp allspice
  • 2 tbsp olive oil for cooking

Herb Yogurt Sauce

  • ¼ red onion
  • Handful fresh parsley
  • 2 large garlic cloves
  • Handful fresh mint
  • 1 cup plain yogurt
  • ½ lemon juiced
  • Salt and pepper to taste
  • ½ tsp cumin

Taco Assembly

  • Romaine lettuce or iceberg lettuce cups
  • ½ cup diced roasted red bell peppers
  • ½ cucumber sliced
  • ⅓ cup chopped olives green or black

Instructions

Prepare the Beef

  • In a food processor, pulse the parsley, onion, and garlic until finely chopped.
  • Add the herb mixture to the ground beef along with salt, pepper, and allspice. Mix well.
  • Heat 1–2 tablespoons olive oil in a pan and sauté the beef mixture until browned.
  • Continue cooking slightly longer if you prefer the beef crispier. Set aside.

Make the Herb Yogurt Sauce

  • Add the red onion, parsley, garlic, mint, yogurt, lemon juice, salt, pepper, and cumin to a blender.
  • Pulse a few times until the mixture is well combined. Set aside.

Assemble the Tacos

  • Place lettuce cups on a serving plate.
  • Add sliced cucumbers and roasted red peppers.
  • Top with the cooked ground beef.
  • Add chopped olives and drizzle with the herb yogurt sauce.

Notes

Roasting the red peppers beforehand adds extra flavor. Simply broil diced peppers with olive oil, salt, and pepper for about 10 minutes.
