Mediterranean Ground Beef Lettuce Taco
I got another healthy recipe for you guys that can be made in under 30 minutes. Lettuce has become the new bread for low carb options and you know what? It is a great vehicle to make for a delicious bite.
Servings: about 6 tacos
Total Time: approx. 30 min
Ingredients
1 lb of ground beef
1/4 of an onion
Handful of Parsley
2 Garlic cloves
Salt & Pepper to taste
1 tbsp all spice
2 tbsp olive oil (for cooking)
Instructions
Mix all the herbs in a food processor then add to the ground beef along with the seasonings.
Add 1-2 tbsp of olive oil to a pan, and saute the ground beef until its browned and leave it longer to crisp if you would like. Set aside.
Other Ingredients
Romaine Lettuce or Iceberg lettuce cups
1/2 cup diced roasted red bell peppers (roast in the broiler for 10 min coated with olive oil, salt, and pepper)
1/2 a cucumber sliced
1/3 cup chopped fresh olives (green or black)
Herb Yogurt Sauce
1/4 of a red onion
Handful of fresh parsley
2 large garlic cloves
Handful of fresh mint
1 cup of plain yogurt
1/2 a lemon’s juice
Salt & pepper to taste
1/2 tsp cumin
Instructions
Place all these ingredients into a blender and pulse a few times until everything is mixed well together. Set aside.
Assembly
Take the crisp lettuce cup and top with sliced cucumber and red peppers. Top with ground beef then the olives. Drizzle sauce to your liking on top.
