You can never go wrong with a one pan roasted chicken and potatoes recipe on your meal rotation. This meal also goes by sneeyet dajaj ou batata in Arabic, and it is a beloved dish made often. It’s such a wholesome and flavorful chicken dinner that can be enjoyed in countless ways. Did I mention how easy it is? It all comes together in one baking pan, with just a quick Middle Eastern-inspired marinade to coat it. This is a classic dish that everyone should learn to make!

This is one of my go-tos when I am hosting guests over for a dinner party. It’s always a good idea to have a chicken option on the dinner table, and nothing beats succulent, slow-roasted bone-in chicken with crispy, buttery potatoes. It’s an easy dish to put together in a pinch, plus it’s wonderful for large gatherings and a money saver.
It pairs nicely with vermicelli-style rice and Arabic salad, fattoush, or cucumber yogurt salad. Honestly, there are just so many ways to enjoy this one pan roasted chicken and potatoes. I even use the same recipe when I want to pair Middle Eastern dishes like Molokhia with roasted chicken, rather than poached. It’s an all-around fantastic recipe to have in your recipe book.

The Best Marinade for Roasted Chicken and Potatoes

This is a marinade that my mother has been making for her baked chicken for decades. It’s honestly perfection. It has notes of acid, salt, and heat that play so well with the chicken and potatoes in this dish. Here is a list of key ingredients in the marinade:
- Olive oil– this marries everything in the marinade and offers a rich flavor profile.
- Lemon Juice– always freshly squeezed for best flavor. Lemon is a must with this chicken recipe for that acidity.
- Shatta or Harissa- this resembles a chili paste or sauce, which brings a slight smoky heat to the chicken.
- Tomato Paste– This gives the chicken that gorgeous color but also excellent flavor.
- An Array of spices: Garlic powder, onion powder, 7 spice, curry spice, salt, and pepper
How to make this One pan Roasted Chicken and Potatoes Dish

- Clean the chicken. I typically clean bone-in chicken with vinegar, salt, and lemon juice, then rinse with water and pat dry. I always use chicken quarters for this recipe, but any bone-in will do.
- Add a layer of sliced onions to the bottom of the rimmed baking dish.
- On top, add the bone-in chicken quarters and position them nicely.
- Add the cubed potatoes into any crevices around the chicken or even tuck them underneath.
- Season with salt & pepper generously.
- Pour the marinade evenly on top.
- Rub the marinade into the chicken and potatoes.
- Lastly, you will add 1/4 cup of water or stock to the pan, then cover with foil and bake.

I made this last night and all my kids went crazy over it. I make a different variation of chicken and potatoes every week and they said this was by far the best. I didn’t have harissa or shatta so I just used red pepper paste. Thank you again for another amazing recipe!
Thank you, Mona! I love to hear that especially that the kids enjoyed it. I appreciate the review!
Made this for my family of 4 last night, and I even made two trays to ensure leftovers for the next day, but we couldn’t help but finish both trays! Genuinely an approachable, yet delicious dish for everyone to enjoy. Will definitely become a regular in our household!
Such an easy and delicious meal! I made this on a day I was fasting, and it turned out great! So versatile too! Will definitely be adding it to my regular dinner rotation.
This is a perfect dish every time!! Made it twice now and never fails. So good mashaallah!
This chicken is heavenly! Perfectly cooked and the melted onions at the bottom are one of the best parts. Prepped it yesterday to marinade all day, and quickly stuck it in the oven after a long day of meetings. Double toddler approved!
This has been my go to recipe lately for baking chicken, it’s so good!
This has been my go to when roasting chicken and everyone loves it!
Thank you ! Looks wonderful. Can I make it with chicken without skin ?
Hi Merium,
As long as it is bone-in then the cooking time will be relatively the same. If its boneless, it will cook in 30 minutes more than likely.
This was so juicy and savoury and delicious!! My fiancé said it tasted like home. What a compliment! I shared with my parents and my mom said how easy to follow and how delicious it was as well!! This has become a regular dish for an after work dinner! I would recommend this recipe to anyone!!!
I made this at multiple gatherings and it’s always such an easy and delicious crowd pleaser. I’ve used boneless and bone in chicken, added carrots or onions and it always works out!
So juicy and a weekly dish in our household! So good and easy!
I’m always looking for easy and quick recipes , while also cooking healthy and trying to make traditional meals for my kids. This one I love because it’s all in one pan and I even added extra veggies my kids like

Wowowowow made this for my family yesterday thinking we’d have leftovers and my kids and husband loved it so much we ended up finishing it all! So delicious, some of the juiciest chicken I’ve had in a while. Definitely putting this in my rotation to make regularly, I’m already excited to make it again!
Can you share with us what brand 7 spice you like and which chicken seasoning you like? PLEASE, I feel like it can make a huge difference.
Hi Mimi,
Sure, I typically get mine from either The Nut House USA which does have an online shop or from my local Arab store Habash brand. I hope that helps.
