Kufta Tarts with Salad and Tahini Dressing

Hey friends! The other night, I was laying in bed and my creative juices were flowing. I knew I wanted to make something with ground beef for the following day but not sure what! Yes, I often plan my meals the night before! So, I wanted to do something different when the idea of a kufta tart popped into my mind. Often, I utilize things I already have in my pantry or fridge and that is what I did in this case. I thought it was an awesome idea especially since it is keto friendly which is perfect for hubby, it is dairy and gluten free which is perfect for me…

    Oven Baked Chicken Taquitos

Hey you guys! How are you doing? I hope you are having a wonderful Eid! Yesterday, I had a few family and friends over for a chill night just to enjoy each other’s company. I wanted to make some appetizers or finger foods that my guests can enjoy throughout the evening. One of the things I made were these delicious chicken taquitos; I mean they were good! What is not to like about moist chicken mixed in with cheeses and herbs in a tortilla? Best yet, this is so simple to make and works beyond perfectly for that leftover chicken that we never know what to do with! Servings: approx.…

    Baba Ghanoush (Eggplant Dip)

I like to think of Baba Ghanoush as the sibling of the well known hummus! It is an appetizer that is served on almost every Middle Eastern brunch table right beside the hummus and falafel. For those who don’t know, Baba Ghanoush also known as Imtabal is a smoky eggplant dish topped with olive oil and eaten with bread. It is a very simple dish to make and not to mention healthy. It requires minimal ingredients and prep time. It’s completely vegan just like most middle eastern appetizers. Lately, I actually prefer this over hummus! I hope you try to make it and enjoy it 🙂 Ingredients 1 eggplant 2…

    Pretzel Coated Popcorn Chicken

When I was in high school, I would often purchase popcorn chicken at lunch time. There was something addicting about that crispy outside and juicy inside that won me over. I haven’t had popcorn chicken since then! Mainly because I thought the only way to enjoy it would have to be fried but no, I was wrong. I baked these till crisp and tender on the inside. I also made these gluten free by using Snyder’s gluten free pretzels as the crust. I also bought my favorite flavor which is honey mustard and onion. C’mon who doesn’t love that? Instead of all purpose flour; I used tapioca flour to substitute.…

    Shrimp Quesadillas

These shrimp quesadillas are just perfect for a quick delicious bite and a fantastic choice for Super bowl this weekend! They are made in literally no time at all. It is the most satisfying bite of shrimp, gooey cheese and caramelized peppers and onions! I want some right now by just writing this up. Plus, most of the ingredients if not all are already in most of our fridges and pantry. This same recipe would work with steak and chicken as well. It is not just confined to shrimp. These are perfect with some guacamole, sour cream or salsa to dip in or just on their own! Total time: 15-20…
