    Shrimp Scampi

This is one of the tastiest and easiest recipes I have made yet. It is perfect with spaghetti too and being a carb lover, that is a big bonus! You can’t go wrong with all these flavors. I use seafood stock to extenuate the flavor of the shrimp as opposed to white wine which is what is traditionally used in this recipe. I literally whipped it up in 10 minutes. You cannot go wrong! It is the perfect weeknight dinner meal. Everyone will enjoy it. Check out the video below to see how I made it! Servings: 4 Total time: 10-12 minutes Ingredients 1 lb cooked or raw shrimp deveined…

    Sweet & Tangy Garlic Salmon

We all need quick weeknight meals. Most of us lead busy lives so dinner ready in under 30 minutes is always a plus. This salmon is absolutely delicious and doesn’t take more than 20 minutes to prep and make! Serve it with a side of rice, veggies and/or salad and you have yourself a complete dinner. I made this the other night on a whim. I bought some beautiful salmon and wanted to use it while fresh. I’ve always loved the sweet and tangy flavors with my salmon so I thought this would be the perfect duo in flavors. I hope you make this for your family and enjoy it!…

    Oven Baked Mediterranean Chicken Thighs

Hi friends! Today, I am sharing with you a delicious chicken dinner dish that I made over the weekend that was a hit for hubby and me. I never ate chicken thighs growing up; we were accustomed to eating chicken breast and never darker meat but I must say chicken thighs really take on flavor well and remain juicy. The addition of olives and lemons is what really makes it feel Mediterannean. I hope you make this dish for your weeknight dinner and enjoy it with your loved ones! Servings: 8 pieces Total Time: 1 hour prep, 30 min cook Ingredients 8 skinless boneless chicken thighs 2 large sweet onions…
