Creamy Garlic Mushroom Chicken

So, as of yesterday, my husband and I decided to try Keto. For those who don’t know what Keto is, its basically an extremely low carb diet and a majority of the food eaten is good fat and the rest is protein. This type of diet will allow our body to go into a metabolic process called ketosis in which our body will burn the fat instead of glucose since there isn’t any sugar. In result, you will lose weight and supposedly have more energy a few weeks into it. This creamy garlic mushroom chicken one skillet dish is so decadent and simple to make. Also, the perfect keto dish!! I always shied away from eating this kind of rich creamy food because I thought it was just bad for you. Here I am eating it to lose weight! Now, let me tell you how easy it is to make this perfect meal.
Servings: 2-4 people
Time: approx. 30 min.
3 large chicken skinless boneless chicken breasts cut into cubes
5 tbsp olive oil
.8 oz package of mushroom sliced
1/2 a cup heavy cream
1/2 cup chicken or vegetable stock
2 tbsp grated Parmesan cheese
3 chopped garlic cloves
Salt & Pepper to taste
2 Tbsp garlic powder
2 tbsp melted butter
1/3 cup shredded mozzarella cheese
1 tbsp red pepper flakes
Cilantro or Parsley for garnish
- In a large skillet, on small to medium heat add 3 tbsp of olive oil and cook the chicken for about 10 min till light brown and no longer pink inside. Add salt, pepper, and garlic powder to the chicken.
- Once cooked, place aside in a plate.
- In the same pan, add the remainder of olive oil then place the mushrooms and garlic. Saute for 3-5 minutes. Add the butter, heavy cream, stock, and cheeses to the pan and stir. Also, sprinkle in the red pepper flakes, salt, and pepper. Keep this mixture on low heat for 5-10 minutes stirring occasionally. This allows the cream to thicken as well without having to add starch or flour.
- Add the chicken back to the sauce and heat everything together for 2 minutes then serve. Garnish with Parsley or cilantro.
