Cottage cheese pancakes are similar yet very different from a traditional pancake. While both may resemble each other, a cottage cheese pancake is creamier and less fluffy than most pancakes, especially when made with oats rather than flour. It doesn’t make it any less tasty, but don’t expect it to taste the exact same!

However, we love them and especially enjoy them with a heavy drizzle of honey or maple syrup with berries. It’s definitely a winner for breakfast in our household.

ingredients for blender cottage cheese pancakes like eggs, rolled oats, bp, vanilla, cinnamon, maple syrup, and cottage cheese

Ingredients Needed for these easy cottage cheese pancakes:

  • Cottage cheese– the amount of milk fat, whether light or full, does not matter where. Both work well. I’ve tried with different brands and haven’t had any problems.
  • Rolled Oats– I use GF rolled oats in this recipe, which add some texture and fiber to your pancakes.
  • Baking powder– the leavening agent needed to provide some rise to the pancake. Try not to overdo it with this, as it can cause an aftertaste in the pancake.
  • Sweetener– Although I don’t always add a sweetener to the batter, it does improve the overall flavor. I like to use maple syrup for the batter.
  • Eggs– this is a binder and necessary for the recipe for a structurally sound cottage cheese pancake.
  • Vanilla & cinnamon– whenever I use eggs in sweet goods, I add vanilla. Cinnamon also has a beautiful flavor profile that pairs well here.

How to cook these Blender Cottage cheese pancakes:

Well, there are two ways you can go about making these. Both yield great results, but have slightly different outcomes depending on your preference for a pancake.

  1. A Griddle– many people use a griddle to cook their pancakes because it’s a flat surface area that typically can fit 6-8 pancakes easily! This makes it easy to make pancakes quickly. Usually, I grease the griddle with salted butter, set it to 275 F, and ladle my pancakes about 6 at a time. They take about 3-4 min each side to cook through.
  2. A Nonstick Skillet– this method allows for the pancake edges to be crispier than when I did my testing. It soaks up the butter and oil better. For the skillet method, I like to use 1 tbsp of coconut oil and ladle 1-2 pancakes per skillet, depending on the size of the pancakes. The edges get crispy and so tasty! I flip at around the 3-4 minute mark and cook the other side for the same amount of time. If you want to ensure the inside is cooked, then place a ladle over the top after flipping for a minute.

Why try these Blender Cottage Cheese Pancakes:

  1. My kids LOVE them. We do too. This is a win since it’s such a simple, delicious, and easy way to get protein in for the day. Each pancake is about 7g of protein!
  2. It only requires a few ingredients and 15 min to put together! I have these on the table in no time.
  3. It all goes in a blender, keeping it convenient and low-mess.
  4. These are also gluten-free if using GF rolled oats, making them a great choice for those with dietary restrictions.
  5. Overall, very healthy and nutritious. I have no guilt eating these! You can easily fold in blueberries or chocolate chips into the batter for a yummy surprise! And if you want extra protein, add some protein powder to the batter!

This was phenomenal! Even my cottage cheese hater husband loved it lol I can’t wait to make it again. Can I make the batter in advance to prep for suhoor?

Five stars honestly isn’t high enough for this recipe. It’s perfection as is, no notes. I occasionally add half a scoop of protein powder, and it’s good like that too. I make it for my kids without the protein powder as well, and they’re obsessed. Everyone needs to make this recipe. Tastes better than regular pancakes!
