Lemon Garlic Cod in a skillet
Hey friends! Lately, my husband and I have been trying to eat more seafood in our weekly diet. We are lessening our red meat consumption and adding more fish instead. Cod is a fish that I never grew up eating but unlike other fishes; it is actually quite affordable. I bought a pound for $12 from Whole Foods which is a steal for seafood! Let’s just say this simple recipe will make its weekly routine into our lives. It is so easy to make after a long day of work and really healthy too.
Ingredients
1 1lb of cod fillet ( about 4 pieces)
4 tbsp unsalted butter (you can use olive oil) (I used earth balance vegan butter)
1 tsp garlic powder
1 tsp paprika
Salt & Pepper to taste
1 lemon (1/2 cut into slices) (1/2 left as is)
A handful of fresh dill & parsley finely chopped
1 tbsp of capers
4 garlic cloves minced
Instructions
Coat the fillets in the above seasonings.
Add 2 tbsp of butter or oil to a warm skillet. Saute the garlic until lightly browned. Add the cod fillets to this pan.
Cook for 3 minutes on one side then flip gently. Add the rest of the butter or oil on top of the fillets. Squeeze half a lemon’s juice and add the capers to the pan as well.
Cook the cod for another 4 minutes. Cod fillet should appear white and flaky.
Serve topped with fresh lemon slices and fresh herbs. Enjoy!
*This was served with pre-packaged cauliflower rice from Trader Joe’s that I sauteed in a pan with olive oil, garlic powder, salt, and pepper until tender. Also, some lemon juice for freshness.
