Turkish Chicken & Flatbread
Hi everyone! Hope you are all well. I am so excited because I have my parents in town visiting me from New Jersey, my home state. Whenever my parents and I get together; it is always a great time. I missed them so much so you can only imagine how happy I am! Much of my cooking has been influenced by my mother who is a phenomenal cook. Anything she touches becomes gold. One of the dishes she has been making as of the last few years is this Turkish chicken and flatbread which my entire family enjoys.
The flavors are inspired by Turkey where they use so many fresh vibrant ingredients in their cooking just like we will be using a fresh salsa to season both the chicken and bread. As a Palestinian, our traditional dish is mskhan which I will be sharing the recipe for soon as well. Mskahan includes a flatbread, lots of cooked onions, sumac, and chicken. It is quite similar to this recipe but more inspired by Turkish flavors. I really hope you give this Turkish Chicken & Flatbread a try. Turkish Chicken & Flatbread
Ingredients
Salsa
- 2 Small lemon's juice or lime
- 1 Large onion yellow or red
- 3 Tomatoes
- 1 Handful Cilantro
- 5 Garlic Cloves
- 2 tbsp Ginger
- 1 Jalapeno
- 1.5 tbsp Tomato Paste
- 1 tbsp White Vinegar
- 1/3 cup Olive or Vegetable Oil
- Salt & Pepper to taste
Chicken
- 3 lbs Chicken Tenderloins Breast or thighs would work
- Salt & Pepper to taste
Bread
- 8 Gyro Flatbreads
Topping
- 1 Onion sliced thinly
- 1 Handful Chopped Parsley
- 2 tbsp Sumac
- 1 Lemon's juice
- Salt to taste
Nuts
- 1/2 cup Almond halves or slivered almonds
- 3 tbsp Vegetable Oil
Cucumber Yogurt Salad
- 2 cups Plain Yogurt
- 2 Persian cucumbers, finelt diced or grated
- 1 Small Lemon's Juice
- 3 tbsp Dried Mint
- 4 Garlic Cloves crushed
- Salt to taste
Instructions
- For the salsa, place all the ingredients in a food processor and pulse until it looks just like a salsa! Set it aside.
- Add 1 cup of the salsa mixture to the chicken. Toss and make sure all the chicken is well coated. Season with some salt and pepper as well. Add more salsa if needed. Marinate this for at least 1-2 hours.
- While the chicken marinates, prep the yogurt sauce and onion topping.
- For the yogurt sauce, combine all its ingredients. Mix well and set aside to chill in the fridge.
- For the onions, toss all its components together and also set aside.
- Once the chicken is done marinating, you can either grill it which gives the most flavor or bake it or even cook on the stove-top. Whatever is easiest for you. Chicken is fully cooked when it reaches 165F internal temeraure.
- For the bread, preheat the oven to 400 F. Add the bread to a lightly oiled baking pan. Lay them out flat. Add 2-3 tbsp of the salsa to the top of the flatbread and spread evenly.
- Bake for 10 minutes until slightly crisp.
- In the meantime, toast the nuts with the oil until lightly browned then place on a plate lined with paper towel to abosrb excess oil.
Assembly
- First, lay the bread flat on desired serving dish. Then, top with the chicken pieces. Then the onion mixture and the toasted nuts. Drizzle with some of the yogurt sauce and voila!

I was really surprised how much this marinade comes through when you grill the chicken! It was SO good!! Also I used extra marinade I had in the water for my rice and it was the best rice I’ve ever made! Highly recommend this recipe!

Great combination of flavors! Made this twice. After the second time, kids asked if I could make it again the next day : ) Only modification was I used whole chicken cut up and used ajvar on pita bread. Easy prep, too.

Recipe looks so good! How big are the flatbreads that you used? They look on the smaller side in the picture, not sure I’ve seen that size in stores her.
