Chicken Penne Pasta

This pink sauce chicken penne pasta is absolutely divine! it is everything you love in a pasta dish. You get the creaminess, tender bits of chicken, and perfectly cooked pasta.

Ingredients

  • 16 oz Penne Pasta or Rigatoni
  • 2 cups Heavy whipping cream
  • 1/2 cup Chicken Broth
  • 2 tbsp Sundried Tomato Pesto or tomato paste but sundried pesto has even more flavor
  • 1/2 tbsp Cajun seasoning or red pepper flakes
  • Salt & Pepper to taste
  • 1/2 cup Grated Parmesan Cheese
  • 4 Garlic cloves, minced
  • 1/3 cup Sundried Tomato, chopped
  • 2 Tomatoes, finely chopped
  • 1 tbsp Olive oil or butter
  • 1 tbsp Corn starch

Chicken

  • 1 lb Chicken Breast cubed
  • Salt & Pepper to taste
  • 1/2 tbsp Garlic Powder
  • 1/2 tbsp Paprika
  • 1/2 tbsp Dried Italian seasoning
  • 1 tbsp Olive oil or butter

Instructions

  • Boil the pasta in salted boiling water until al dente which is about 12 minutes. Then drain and place back in the pot.
  • While the pasta is cooking, add the olive oil to a pan along with the chicken and its seasonings. Cook for about 8 minutes until the chicken is fully cooked and tender with a nice sear on each side. Set the chicken aside in a bowl.
  • In the same pan the chicken was cooked in, add the olive oil along with the tomatoes, garlic, and sundried tomatoes. Saute for 5 min or so. Then, add the corn starch and stir.
  • Add the heavy whipping cream, stock, pesto or paste, and seasonings. Stir and let this simmer until the sauce starts to thicken. Once it starts to thicken which will take a few minutes on medium heat, add the parmesan cheese and stir.
  • Then, add the chicken back to the sauce and mix together. Pour the sauce onto the pasta and stir. Enjoy!
