Chicken Penne Pasta
This chicken penne pasta is everything you would ever want in a pasta dish. With Valentine’s day right around the corner, I wanted to make an easy pasta recipe that can be enjoyed for all the quarantine dinners that will be happening this year.
Now, what better than a pink sauce chicken penne pasta to go right with the theme. Plus, who doesn’t love an indulgent meal that will leave you so satisfied at any time in the week! It honestly takes just a little prep work and cook time to come together. The final outcome is pure decadence and flavor. You cannot go wrong with this easy pasta recipe.

Chicken Penne Pasta
Ingredients
- 16 oz Penne Pasta or Rigatoni
- 2 cups Heavy whipping cream
- 1/2 cup Chicken Broth
- 2 tbsp Sundried Tomato Pesto or tomato paste but sundried pesto has even more flavor
- 1/2 tbsp Cajun seasoning or red pepper flakes
- Salt & Pepper to taste
- 1/2 cup Grated Parmesan Cheese
- 4 Garlic cloves, minced
- 1/3 cup Sundried Tomato, chopped
- 2 Tomatoes, finely chopped
- 1 tbsp Olive oil or butter
- 1 tbsp Corn starch
Chicken
- 1 lb Chicken Breast cubed
- Salt & Pepper to taste
- 1/2 tbsp Garlic Powder
- 1/2 tbsp Paprika
- 1/2 tbsp Dried Italian seasoning
- 1 tbsp Olive oil or butter
Instructions
- Boil the pasta in salted boiling water until al dente which is about 12 minutes. Then drain and place back in the pot.
- While the pasta is cooking, add the olive oil to a pan along with the chicken and its seasonings. Cook for about 8 minutes until the chicken is fully cooked and tender with a nice sear on each side. Set the chicken aside in a bowl.
- In the same pan the chicken was cooked in, add the olive oil along with the tomatoes, garlic, and sundried tomatoes. Saute for 5 min or so. Then, add the corn starch and stir.
- Add the heavy whipping cream, stock, pesto or paste, and seasonings. Stir and let this simmer until the sauce starts to thicken. Once it starts to thicken which will take a few minutes on medium heat, add the parmesan cheese and stir.
- Then, add the chicken back to the sauce and mix together. Pour the sauce onto the pasta and stir. Enjoy!
